Xanthan Gum is a polysaccharide with a wide variety of uses, including as a common food additive. It is a powerful thickening agent, and has uses as a stabilizer to prevent ingredients from separating. Derived from corn sugar, it is soluble in both hot and cold water and is ideal for thickening foods and adding volume to lotions, creams & gels.
Xanthan leaves no aftertaste, is stable in a wide range of temperatures and pH environments, has good freeze thaw stability and provides excellent cling to salad dressings and similar food products. Xanthan possesses excellent suspension properties, gives good mouth-feel to products and is extremely thixotropic by nature.
Xanthan is a regular ingredient in gluten-free recipes used to bind, thicken and emulsify gluten-free ingredients. If Xanthan Gum or an alternative is not added to gluten-free baked goods, they will not cook properly and become a pile of crumbs. If too much Xanthan Gum is used in a recipe the baked goods will exhibit a slimy texture and feel heavy and even gummy-like.

Gunge / Slime:
Xanthan Gum can be mixed with water to create a bucket of gunge. Add 80 – 130g of Xanthan Gum to 10 Litres of luke warm water and mix with a hand blender for 10 minutes.
Xanthan Gum is also used in the manufacturing of cosmetics, and numerous scented products.
